You can select any start type to self launch.
In offline mode, you simply start the motor and push the throttle.
In online mode, when it's your turn to launch (you're first in queue) and
- your motor is extended: the motor is started automatically and full throttle applied.
- your motor is not extended: normal tow / winch launch is done.

Wing flaps + 8°, trim fully tail down.
The take-off roll may be executed with one wing on the ground.
With a crosswind if there is no wing runner the lee-wind wing should be
on the ground. The drag of the wingtip wheel partly compensates the
moment of the wind on the vertical tail. This technique reduces the
tendency to turn the glider into the wind.
Gently apply full throttle, as soon as the aircraft rolls lift the wing by
applying aileron.
Pull back stick during start roll until you have full control authority.
Then roll on the mainwheel until you reach take-off speed.

After take-off accelerate the DG-808C to Vy = 90 km/h (49 kts) and
climb with this speed.
Retract the landing gear after reaching safety altitude.
Execute the whole climb with full throttle to ensure a smooth engine run.

Remember that in order to start the race your engine will need to be switched off below the tow release height (or 300 AGL when winchlaunching is used). You will not be able to start the task if you climb all the way on the engine. This is to keep it fair for competitors using the tow.
Also starting the engine on task will result in being scored as landed at the point where you first use it, providing you land safely after using the engine. If you crash after using the engine it will be scored as a crash.

So...after "Start Flight" do I have to release the winch or tug cable before starting the motor ?

Do not press start flight....
If offline, just start the engine and go.
If online, if you're engine is fully extended when it is your turn, it will start at max rpm on it's own
If online and engine not fully extended, towplane will come (or winch) as usual....you can still decide to release and go on with engine.
The order in which you release or start engine does not matter.
However, take into account the time it takes to deploy the engine if you release low.
IRL, I don't think it is a good idea to run the engine while towed....in Condor, it might be fun

I have tried all recommended methods without success in the Big Pyrenes landscape I was in.
For some reason when I moved to a new saved task in CA -1 Everything has worked perfectly. For anyone else who is struggling, here is the offline procedure I am using.
Don't press Esc to start flight. Just deploy the motor, fire up and go.
Climb to any height before "Race is on" notification. Or hang around in the start box.
I have found the start gate becomes active as soon as I enter (even with engine on) I think I can continue to motor on even when I leave the box when "Race Started" notification comes up.
Brilliant...job done. The PDA works fine and I'm off on task.

This isn't true. If you use the engine you have to turn it off before the start will turn green! You also have to descent below the tow release height (or 300 AGL when using winchlaunching). This is programmed into Condor to keep it fair for people that do not have the planes with engines.

How do we start the engine? When I start in free flight, the two plane always gets in place.

The towplane doesn't take position unless you hit the 'start flight' button. For self launching you need to first extract the motor, start it, then throttle it up. You also need to manually stow the engine as well once you're done. Look up the keybindings in the input menu for the kb commands or to bind your own buttons/axes if you have peripherals to support it

I've been disqualified three times recently before reaching max tow height,
and I cannot understand why this is occurring.

using engine at any point before the race countdown has ended
Aerotow or airborne start: after using the engine you have to have been with the engine off below the height set in the notam tab (height where the towplane rocks its wings or the height you entered the game at). After that you can start the task normally
Winchlaunch: after using the engine you have to have been below 300 m AGL with the engine turned off. After that you can start the task normally
If you use the engine again, you again have to meet the above requirments.

Same as above applies. But if you are in the sector and it has turned green, it will turn red again when you start the engine. You will have to comply with the rules as stated above to be able to turn the secor green again.

You cannot restart the task unless you land back at the start airport and click "restart" from the esc menu. Maximum of 3 restarts allowed, after that the option dissapears! You cannot restart the task at all after you have turned the first turnpoint.
