i would say, as big as possible. (Space, money?)
i went for a 34" curved one (dell alienware AW3418DW). i like it.
(but G-Sync was a waste of money for me, because it caused quite some problems and does not work in windowed mode either. So i shut it of )

A 32" 21:9.
It works well as a 24" 16:9 when using for normal jobs like viewing webpages. But can be used like two 4:3's when working with spreadsheets ect.
For photo editing you can look at a 16:9 image full size and have room for tool bars on the side. For editing sake ied go with a flat. But for a Sim maybe curved. Condor looks good from the further distance i sit when using a joystick in front of it. A good all-round format i think. If it was 100% flight Sim use then just as large as possible.
IPS, LED's have accurate colours. When i got my LG 34um95 only 3K ones where available. But id for 4k HDR these days. No need for a frame rate above 60hz IMO. 4k for TV's is not always necessary as you sit so far away. But up close, as with PC monitors, it makes a difference.
PS, I used a colour calibration camera and further calibration against lab prints. The LG IPS needed very little adjusting out the box. Mostly just the brightness tuning down. Not that that matters for a Sim.
