Is there a guide for setting weather?

I want to know about ways of varying weather with either time or location(wave?) but it's very difficult to get the weather settings 'just right' where it's not so strong it's 'VNE wing masher' or a 'into wind slog' when using thermals.

Are there any hints of tips that you could give me to help with the weather on task setting?
