Depending plane, water load, MC and wind speed the window is too small to show all data in the graph, for example,
E= is unreadable. See attached screen shots.
Is there a way to have a bigger window or to 'move' inside the window to see the full data ?

5 m/sec is incredibly unlikely to be sustained enough for an MC setting. Try 2. Which is still optimistic.

I rarely have the MC set over 3.5. Especially at altitude you can't even fly at MC 5 due to it being so close to VNE.
Curious why you want to know the E at MC5? Maybe, if you really want to know: Marc Till has a set of polars for all Condor planes for XCsoar. It comes from the actual Condor polars. Maybe you can find the info there: http://www.condorutill.fr/

Besides that, if you have the horizontal (251km/h) and vertical speed (2.93m/s) it shouldn't be too complicated do compute the glide ratio...

Sink rate is not always readable.
Please at least display resulting E,sink, and speed outside the graph, should be easy.
